Of those 3, Hendrix would be my favourite.
Clapton is a damn good guitar player, but I've lost alot of my need to listen to him. I think I can appreciate his talent, just not his song selection over the last 2 decades.
Stevie was great. The library is short there, so I've heard everything more than enough times.
